I learned a couple of things from Halloween. First, as a “Mom Inc” do we feed off the fury of our energy during weekdays when we return to being full-on moms on weekends…or is it vice versa?  After a sleepless week, I continued at a ruinous pace all weekend.  On Sunday I found myself head down literally sewing in the backseat right down to the last minute.  The never ending Zilla costume not only needed the tail attached but the the flaming building and plane (above) as well.  Did I look up enough?  I think it was only when Zilla was hooting and hollering down the streets with crazy glee and dancing with all of the other kids that I stopped the gears and took in that moment with all of my might.  As impossible as it seems I am definitely taking note…this week I am going to try and slow it down a little even though I feel like I have a lot on the plate.  How about you all?  Let’s make a pact…

The other thing?  A little sugar cookie goes a long way.  I baked some before going trick or treating and it was such a nice thing to do on a Sunday afternoon!  I literally stopped baking cold turkey post “Mom Inc” and so I needed something safe to ease my way back in.  The recipe I used was for lime sugar cookies and below is the recipe.

Recipe for Lime Sugar Cookies (from Gourmet)

6 Tablespoons unsalted butter, room temp

2 tablespoons cold vegetable shortening

1 cup sugar

1/2 cup lime sugar (or plain sugar)

1 large egg

1 teaspoon vanilla

1 1/4 all purpose flour

1 teaspoon baking powder

1/2 teaspoon salt

Beat together the butter, shortening, sugar and 2 tablespoons of the lime sugar with an electric mixer until light fluffy.  Beat in the egg and vanilla. Sift the flour, baking powder and salt together over the egg mixture, then bath on low speed until just combined.

Form the dough into a 10-inch log about 2 inches in diameter, then wrap in wax paper.  Chill the dough until firm, at least 4 hours. Preheat oven to 375 degrees and set rack on middle.

Remove wax paper and cut log into 1/4 inch rounds.  Place cookies at least 1/2 inch apart on ungreased baking sheets. Bake in batches for 10-12 minutes, or until pale golden.

Transfer immediately with a metal spatula to a rack set over a sheet of wax paper and sprinkle the tops with the remaining lime sugar.  Let the cookies cool before storing in an airtight container for up to 2 days.

Bet that costume finished off great! And I know what you mean about slowing down. Sometimes I really enjoy that crazy run you nuts pace, but I also have to remember to slow down sometimes and just take things in. Glad I found this week, can’t wait to look around a bit more!

Halloween was a blur but it seems holidays are always this way with us. I’m going to try and take slower (“TRY”) until Thanksgiving!
