Make: Homemade Pasta

This photo seems amiss but yes, that is indeed Designing Mom Shinmin’s four year old daughter making  homemade pasta. Nevertheless that Shinmin is a true artist when it comes to her cakes and pastry skills…she insists that this is easy for the entire family to participate in. See below for the recipe and instructions!

We love to make fresh pasta at our home.  It’s the best “play dough” and Mila learns about what goes into the foods she eats.
If you can remember 2-2-2, then you can remember this easy recipe.
2 Cups of Flour
2 Whole Eggs
2 Eggs Yolks
Making the dough
Make a well in the center of the flour.  I like to use half semolina four and half all purpose flour.  Add eggs to the center.  Slowly start to mix flour into eggs, working from the center outwards.  When dough starts to form, start kneading for a few minutes, constantly turning the dough.  If the dough is too dry and crumbly, add a few drops of water.  But I like a pretty dry dough because it makes a chewy pasta.  Wrap in plastic and refrigerate for at least an hour.
Rolling the pasta 

Using a pasta machine, press the dough through the widest setting.  Before continuing to thinner settings, fold and press the pasta through the machine until the dough is completely smooth.  This gives the pasta more “teeth” or chew.  Roll pasta to desired thickness.  Cut and shape pasta to your choice.  Be sure to give some rolled sheets and cutters to your kids to make their own pasta.
Cooking the pasta
Bring a large pot water to a boil.  Add salt.  Cook pasta for about 2 minutes.
Mila’s favourite is bow tie pasta with pesto.
