Kale chips.I’ve been on a mission to get Mila to consume more iron (doctor’s orders due to the lead poisoning incidence…long story).
I’ve tried all kinds of creative, borderline desperate, attempts. Mila is not big on meat or veggies. So besides plain pasta, meal time is not easy. I tried home made spinach ravioli, frozen chard/tofu pops, beef meatballs over spaghetti, nothing worked.
Her mouth stays sealed shut except on the rare occasion she decides to eat paper. That is when I had an ah-ha moment. I know she likes the texture of paper. So why not create food with that texture?!
The result is KALE CHIPS. Mila absolutely LOVES them. They have the texture of crispy paper. They crunch with each bite. Mila consumes a huge amount at a time.
Here’s how to make them. It’s so simple. A bunch of kale from the supermarket will be enough for 3 or 4 baking sheets of chips.
Preheat oven to 250F. Wash and dry the kale. Cut out and throw away the middle thick stems. Lay the leaves flat on the baking sheets. Drizzle some olive oil and a bit of salt. Bake for about 20 – 25 minutes and crunch away.
Tip: after making these plenty of times I bought an olive oil spray. This applies a thin even coat on the leaves.
